How long is too long depends on what other options there are.

If the question is how long is too long without any kind of sex, even self-play, I wouldn't want to go without for more than maybe two or three days. (But if sex with a partner is likely after one more day, I'll wait for the partner sex rather than beating it, though I may play with myself to the point of arousal but not release.)

If it's a questions of how long without partner sex, I'd say that after three or four days my wife and I start to get on each other's nerves, so that we both need something.

If it's a question of how long without a certain act, but with other sex acts as an option, then it's not such a problem. When my wife was supposed to abstain for six weeks due to an injury to her lady-parts, she made sure she pleased me with other acts, sometimes hand jobs, sometimes oral, sometimes a combination of things. She needed stimulation too, but on doctor's orders we limited it to breast play and sometimes light oral that didn't push her to the sort of heavy-duty orgasms that might aggravate her injury. But we couldn't last the doctor-recommended six weeks; we gave in after five. And it was glorious!

If we had some sort of indeterminate medical ban on sex, it would get pretty difficult, although alternate acts would help. I would understand if she needed to have a substitute partner if I were unable to do anything for her (in a coma, trapped on a long-term job assignment far away, etc.), and she would understand the same for me. Of course, she'd probably have an easier time finding a substitute partner than I would, so if we were separated by work for some months she'd probably have more stories to tell than I would.
